Freeze-drying, also known as lyophilisation, is a process which allows materials to be dried and preserved. Firstly, the material containing water is brought to a frozen state solid. Then, the water subsumes amidst the air, removing it to protect the material.
By going through the process of sublimation and desorption, the share of solvent is diminished to a certain level, thus preventing the growth of micro-organisms as well as reactions between the components and solvent. As a result, the product can be kept in original condition for a log period of time.
The vacuum freeze-drying method is a journey from liquid, to solid, and finally returning to its gas form. During the process, the "liquid bridge" between the ingredients is frozen to a "solid bridge". This secures their relative position, while eliminating any surface tensions on the gas-liquid boundaries between them. By distilling the solvent continuously, the "solid bridge" continues to decrease until it is completely removed, without any changes in the distance between the ingredients.
