Freeze-dry, also known as lyophilization, is a process used to preserve materials by removing water within them. It works by freezing the material containing water to a solid state, and then causing the water to sublime from a solid to air, resulting in a dry material.
The vacuum freeze-drying method is a transformation from liquid to solid, and then to gas. During the process, the liquid present between particles freezes into a solid. This causes the particles to be held in place, preventing the surface tension that happens between liquid and gas. As the liquid continues to evaporate, the solid bridges that hold the particles in place gradually disappear, eventually leaving the material dry and intact.
